This is a spicy twist on a world-wide favourite. Whether you call it a grilled cheese, a toastie or a jaffle - toasted bread with melty cheese is always going to be a hit and is as comforting as it gets with food.

This East meets West version is packed with aromatic spices, sweet and soft onions, tangy green chilli pickle, and a blend of sharp cheddar and stretchy mozzarella. You can make it in a frypan or a sandwich press, but we’ve gone with a jaffle iron to create a perfect pocket that fits more of the oozy cheese filling. Just be careful with that first molten bite!


Ingredients (Serves 2-4)

  • 8 slices white bread
  • 2 tsp mustard oil (or other neutral oil)
  • 1 tsp cumin seeds
  • 1 red onion, sliced
  • Salt, to taste
  • Handful fresh coriander, chopped 
  • 1 tsp chaat masala
  • Green chilli pickle, to taste
  • 100g cheddar, grated
  • 100g mozzarella, grated
  • Gunpowder spice
  • Ghee or butter

Heat mustard oil in a frying pan over medium heat. Add cumin seeds, toasting in the oil until they start to pop, then add the sliced onion and cook until softened. Add the chopped coriander, salt and chaat masala.

Spread one slice of bread with green chilli pickle and top with the cooked onion mixture and ¼ of the grated cheese. Top with another slice of bread. Brush the outside of one side of the sandwich with melted ghee and sprinkle with gunpowder spice. Place in preheated sandwich press, or a frying pan, ghee side down. Brush top with more ghee and gunpowder spice. Toast until the bread is uniformly browned and the cheese is fully melted.
