Made in the Northern Isles of Scotland using traditional methods and Orcadian ingredients, Orkney Craft Vinegars are raw, unpasteurised, unfiltered, and bottled with the mother. Aged in oak barrels for up to a year, these unique vinegars are softer than most mass-produced vinegars but are still flavourful and can be used in a variety of different dishes.
This malt vinegar is made with ancient heritage grain bere barley and has been aged in bourbon whisky casks from Scottish distillery Highland Park. Deeply complex in flavour, this vinegar can be used to dress sticky roasted onions or squash, deglaze a pan of sauteed mushrooms, and balance hearty slow cooked meat like beef cheek or brisket.
