This results in a fish sauce with an authentic flavour, full of umami but clean and free from chemical preservatives and MSG. Another characteristic that sets this fish sauce apart from other products is the nitrogen content, displayed on the bottle. The higher nitrogen level, the higher the volume of fish used to produce the sauce, thus a higher quality product. Commercially produced ‘fish sauces’ are usually diluted with artificial colours and flavours, having a standard nitrogen level of 20-30 °N.
