Classic Hot Chocolate
Heat 50ml of any kind of milk in a saucepan, bringing to a simmer. Whisk in 2-3 tablespoons of drinking chocolate (depending how chocolatey you prefer), mixing until dissolved. Add another 150ml of milk, stirring and gently heating until hot. Pour into a mug and top with a marshmallow or whipped cream and a sprinkle of cinnamon.

Mocha
Heat 200ml of milk in a saucepan, or in the microwave, until hot but not boiling. In a mug combine 2 tablespoons of drinking chocolate with one shot of freshly brewed espresso (or 1 tsp of instant coffee and a splash of hot water), mixing until chocolate is dissolved. Slowly pour the hot milk into the mug while stirring. Sprinkle a little extra drinking chocolate on top to garnish.

Boozy Peppermint Hot Chocolate
Serve this in place of dessert on a cold evening! Make a batch of Classic Hot Chocolate in a saucepan and keep warm while you build the cocktail. In a warmed latte or Irish coffee glass (rinse with hot water) combine 30ml crème de cacao, 8ml crème de menthe and 30ml peppermint schnapps. Top with Classic Hot Chocolate (about 90ml) and stir with a long bar spoon. Enjoy slowly!
