Belgian waffles with candied bacon, grilled stonefruit and maple yoghurt
Maple syrup and sugar are sweet and smoky.
The caramel tones make them ideal for both sweet and savoury dishes.
Maple syrup is the boiled down sap of the maple tree and maple sugar is made by reducing the sap to the point beyond which it becomes syrup.
Make a savoury rub using maple sugar, salt, sweet smoked paprika and garlic powder and use to coat chicken wings. Cook and serve with chipotle mayonnaise.

They are crisp, rich and fluffy – a perfect way to start your day.
Ingredients (Serves 10)
- 180ml milk
- 1 tbsp dried yeast
- 1 tbsp maple sugar (or use golden caster sugar)
- 275g flour
- 1/2 tsp salt
- 240ml buttermilk
- 6 tbsp melted butter
- 1 large egg, beaten
- pearl sugar
- maple syrup
To serve:
- Grilled peaches or other stone fruit (sprinkle with maple sugar before grilling)
- Candied bacon (sprinkle with maple sugar or maple syrup before baking at 200C until crisp)
- Maple yoghurt (mix 1/2 cup of yoghurt with 2 tbsp maple sugar or 3 tbsp maple syrup)
Warm the milk in a small pan, add the yeast and a pinch of the sugar, stir and leave until the surface is covered with tiny bubbles.
Whisk the remaining dry ingredients in a bowl, and mix the buttermilk, melted butter and egg in a jug.
When ready, whisk the yeasty milk into the jug, then slowly pour this into the dry ingredients, mixing gently with a spoon or spatula to incorporate as you go.
Cover loosely and allow to sit at room temperature for between an hour and overnight.
Lightly grease then heat your waffle iron.
Pour in just enough batter to cover the base, spreading it out, then turn down the heat slightly and close the lid.
Cook until golden and sprinkle over pearl sugar and serve with candied bacon, grilled peaches and maple yoghurt.
