Agar agar is an excellent gelling agent and a gluten-free and vegan friendly substitute for gelatine, as it is made from red algae, producing a firm, clear, unflavoured jelly that is rich in iodine and trace minerals. It also has stronger setting properties and, unlike gelatin which requires refrigeration to set, will set at room temperature after about an hour - although it is advisable to store dishes gelled with agar agar in the fridge as it is a high protein ingredient - and can also be remelted.
